Looking for something delicious for breakfast or brunch? These savoury waffles are topped with crispy bacon, a perfectly fried egg and a fresh corn and tomato topping.

It is a hearty, colourful and wonderfully satisfying way to start the day.

Ingredients

Waffle Batter

  • 200 ml (¾ cup + 1 tbsp) all-purpose flour
  • 100 ml (⅓ cup + 1 tbsp) cornmeal
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 50 g (3½ tbsp) butter, melted
  • 200 ml (¾ cup + 1 tbsp) milk, at room temperature
  • 2 tbsp finely chopped fresh chives
  • 1 egg

Topping

  • 2 canned corn cobs, drained
  • 3 spring onions (green onions)
  • 3 tomatoes
  • 1 tbsp neutral cooking oil
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 200 g (7 oz) bacon
  • 6 eggs

Instructions

    1. Prepare the Waffle Batter

    Combine the all-purpose flour, cornmeal, salt and dry yeast in a mixing bowl.

    2. Finish the Batter

    Melt the butter in a small saucepan, then remove it from the heat and stir in the milk.

    Whisk in the egg.

    Pour the liquid mixture into the bowl with the dry ingredients and stir until well combined.

    Mix in the finely chopped chives.

    Cover the bowl and allow the batter to rest and rise for approximately 30 minutes.

    3. Prepare the Corn and Tomato Topping

    Cut the corn kernels from the cobs.

    Quarter the tomatoes, remove the soft seed-filled centres and dice the remaining tomato flesh.

    Combine the corn, diced tomato and finely sliced spring onions in a small bowl.

    Add the neutral oil, salt and pepper.

    If desired, add a little extra chopped chives.

    Mix well and set aside.

    4. Cook the Waffles

    Preheat and generously grease a waffle iron.

    Cook the waffles until golden and crisp.

    Transfer them to a wire rack and loosely cover with a clean kitchen towel to keep them warm while you prepare the toppings.

    5. Cook the Bacon

    Fry the bacon in a hot frying pan until crisp.

    Transfer the cooked bacon to a plate lined with paper towels to drain any excess fat.

    6. Fry the Eggs

    Heat a little butter in a frying pan.

    Fry the eggs until the whites are completely set and the yolks are cooked to your preferred consistency.

    To Serve

    Top each warm savoury waffle with the fresh corn and tomato mixture, crispy bacon and a fried egg.

    Pea shoots also make a delicious fresh addition.

    Serve immediately.

Notes

These savoury waffles make a wonderful alternative to traditional sweet breakfast waffles.

The combination of cornmeal and chives gives the waffles extra flavour and texture, while the fresh tomato, corn and spring onion topping balances the richness of the bacon and egg.

They are perfect for a leisurely weekend breakfast, brunch, or even a simple breakfast-for-dinner meal.
