Korv stroganoff, or korvstroganoff, is one of Sweden’s most beloved everyday meals.

Made with falukorv, onion, tomato paste, mustard and cream, it is quick, simple and deeply comforting. The key is to brown the sausage, onion and tomato paste properly before adding the cream, which gives the finished sauce much more flavour.

Serve with rice and a fresh green salad for an easy Swedish family dinner.

Ingredients

Sausage Stroganoff

  • 600 g (1⅓ lb / 21 oz) falukorv or similar mild ring sausage
  • 2 yellow onions
  • 2 tbsp butter
  • 50 ml (3 tbsp + 1 tsp) tomato paste
  • 2 tbsp chili sauce or ketchup
  • 1 tsp mustard
  • 300 ml (1¼ cups) heavy cream or cooking cream
  • 1 tsp salt
  • 1 pinch freshly ground black pepper

For Serving

  • Cooked rice
  • Green salad

Instructions

    1. Prepare the Sausage

    Remove the casing from the falukorv if necessary.

    Cut the sausage into thick strips or batons.

    2. Prepare the Onion

    Peel and chop the onions.

    3. Brown the Sausage

    Melt the butter in a large frying pan over medium-high heat.

    Add the sausage and onion and cook until they begin to brown.

    Add the tomato paste and continue frying for a few minutes so it darkens slightly and develops more flavour.

    4. Make the Sauce

    Stir in the chili sauce or ketchup and mustard.

    Pour in the cream and stir well.

    Reduce the heat and simmer gently for approximately 5 minutes.

    Season with salt and freshly ground black pepper.

    5. Serve

    Serve the korv stroganoff hot with freshly cooked rice and a green salad.

Notes

For the best flavour, take the time to properly brown the sausage and onions before adding the liquid.

The tomato paste should also be fried briefly rather than simply stirred into the sauce. This helps deepen its flavour and removes some of the raw acidity.

Korv stroganoff is best when it has plenty of sauce. If you are using a very large frying pan, the liquid may evaporate more quickly, so add a splash of water or extra cream if the sauce becomes too thick.

Falukorv is a traditional Swedish sausage with a mild flavour. If it is unavailable, use another mild cooked sausage with a similar texture.
