Veiled Farmer's Daughters (Tilslørte Bondepiker)
One of Norway's most beloved traditional desserts, Tilslørte Bondepiker combines soft apple compote, lightly sweetened whipped cream, and buttery cinnamon breadcrumbs. The result is a perfect balance of sweet and tart, creamy and crunchy.
Ingredients
Apple Compote
- 3 apples, peeled and diced
- 6 tbsp sugar, divided
- 3 tbsp (50 ml) water
Cinnamon Breadcrumb Layer
- 2 tbsp butter
- 6 tbsp breadcrumbs
- 1 tsp ground cinnamon
Whipped Cream
- 1¼ cups (300 ml) heavy whipping cream
Instructions
Step 1
Peel the apples, remove the cores, and cut them into small cubes.
Step 2
Place the apples in a saucepan with:
- 4 tbsp of the sugar
- all of the water
Cook over medium heat until the apples are soft and beginning to break down into a compote.
Allow to cool completely.
Step 3
In a skillet, melt the butter together with the remaining 2 tbsp sugar.
Add the breadcrumbs and cook, stirring frequently, until golden and lightly toasted.
Stir in the cinnamon.
Remove from the heat and allow to cool.
Step 4
Whip the cream until soft peaks form.
Step 5
Layer the apple compote, whipped cream, and cinnamon breadcrumbs in serving glasses or dessert bowls.
Serve immediately.

Using Applesauce
Short on time?
You can substitute homemade apple compote with:
- 1½ cups (350–400 ml) unsweetened applesauce
- homemade apple puree
Adjust the sugar to taste depending on how sweet the applesauce is.

Traditionally, the breadcrumbs are toasted in butter and sugar until crisp and caramelized.
