Mustikkapiirakka - Finnish Blueberry Pie
A simple Finnish summer dessert made with a soft vanilla cake base and juicy blueberries. Traditionally served slightly warm with vanilla sauce or whipped cream.
Ingredients
For the pie
- 2 eggs
- ¾ cup (150 g) sugar
- 2 tsp vanilla sugar (or 1 tsp vanilla extract)
- 2½ cups (300 g) all-purpose flour
- 1½ tsp baking powder
- ⅔ cup (150 ml) melted butter
- ½ cup (100 ml) milk
Topping
- 7 oz (200 g) blueberries (about 1½ cups)
For Serving (Optional)
- Vanilla sauce, custard, or whipped cream
Instructions
Step 1
Preheat the oven to 400°F (200°C).
In a large bowl, lightly whisk the eggs. Add the sugar and vanilla sugar.
Mix together the flour and baking powder, then add to the bowl. Pour in the melted butter and milk. Stir until the batter is smooth.
Step 2
Pour the batter into a greased 9½-inch (24 cm) pie dish.
Sprinkle the blueberries evenly over the top.
Step 3
Bake on the lower rack of the oven for 25–30 minutes, or until golden and cooked through.
Step 4
Allow to cool slightly before serving.
Serve warm with vanilla sauce, custard, or whipped cream.
Notes

In Finland, this pie is traditionally made with wild bilberries (metsämustikka) rather than the larger cultivated blueberries commonly found in supermarkets. If you can find wild bilberries, they will give the pie a deeper color and a more intense berry flavor. 🇫🇮🫐
